To clean a stainless steal knife black you must first clear off all the large debris off the knife block. then pour soapy water onto the knife block and scrub thoroughly with a sponge. After that rinse the knife block with warm or hot water, never cold. Lastly wipe the knife block down with sanitizer and dry with clean rag or paper towel.

I think you can clean with a soft brush but I would advise a "hoof" knife which is like a curved knife and I would personally use a hard briselled brush it is easier to clean. They are cleaned with a pick
It's unhygienic. The floor that you dropped the knife on will not be clean (as in free from germs). Your jeans will also not be free from germs.

a 1886 knife is worth allot only if it's good condition and clean and has some kind of marking on it to say it was made in 1886.

I have an old flat file with a knife-edge on the end of it that works well. Also, a putty knife and a piece of scotch brite are helpful.
