or Put trotters in a tub of water for 2 hours giving them a good clean under running watr after being taken out the tub. You can then either boil them until cooked, take the meat off, then serve with a sauce or after being cleaned and soaked put them in a pan in the oven for 45 minutes and then add any seasonings, flavouring or make a sauce, then serve and enjoy.

Clean them well by starting them to boil in a pot of water. Pour out that water, rinse the ears and cover them with fresh water. Add salt, black pepper, one chopped medium onion, one tbsp cider vinegar and two or three cloves of garlic. Bring to boil then cook on low heat (simmer) for approximately three hours or until very tender.

1 pound pig ears, cleaned (about 4 whole ears)

12 cups water

1 thumb-sized piece of ginger, peeled and sliced

1 yellow onion, chopped

1 large carrot, chopped

2 stalks celery

1/4 cup white vinegar

1/2 cup soy sauce

Rinse ears in cold water. Combine ingredients in large pot and bring to simmer. Simmer over low heat for about 2 hours or more until ears are tender. Remove ears from liquid and cool in refrigerator. When cold, slice into thin strips and reserve.

visit local farm with several blankets and flamethrower, wrap pigs in blankets then torch for 20mins till skin has crackled
