Well, the first step in making olive oil is to get the best and freshest olives. Black or green olives are usually used when making olive oil because they tend to be the most commonly grown and produce the best yield. When making olive oil, the olives should be extracted from the tree and removed of all debris including leaves, twigs, and waste that is present on the olive. Make sure that you DO NOT remove the pits of the olive when in the process of making olive oil. In fact, the pits are the part of the olive that gives the most oil. When the olives are ready to be juiced, most oil producers will use some form of a masher or mortar and pestle to grind the olives into a paste. When grinding, do not be tempted to put the olives in a blender or food processor because when ground quickly, the olive will give off a very bitter taste in its oil. When the paste is made, the oil will be visible and then can be extracted in some way, either through a filter or strainer.
I guess when you pickle anything, you add salt and water, then you keep it in a closed container for a few weeks. I guess you can add extra seasonings to it too for extra flavor.
