Can be done file type by file type:
Go to:
control panel/programs/default programs/set associations
Scroll down the list and pick the one you want.
Pick .mp4 (for example)
click on 'change program' (top right)
Browse to the media player (.exe file) you wish to play the file in.
I don't know if you can hold ctrl and highlight multiple file types to change more than one at a time.
