PARCHED PEANUTS: any amount of peanuts can be used simply spread peanuts in a single layer on suitable oven safe cookie sheet or pan heat oven to 350 degrees roast at 350 for 15 minutes (taste test at 10 minutes - undercooked peanuts are still very good and you may develop a taste for slightly undercooked ; the most common mistake is overcooking , which ruins the peanuts - if the peanuts are a uniform light to medium brown, they are overcooked - dark brown means you burnt them : start over) remove from oven and let cool for 5 to 10 minutes an alternative method is to heat the oven to 500 degrees ; put peanuts in oven; and turn the oven off - come check them in 45 mins to an hour

Parch Peas very popular in Lancashire mainly on the Fylde coast in the 50s they are really Maple Peas, a dried brown pea and you parch them by soaking overnight in salted water then simmer for a couple of hours with a slug of vinegar to taste, Some like them firm some mushy, I prefer mine firm and salty and I eat them like peanuts with a pint. very moreish but not popular with southerners.
