Test the coolant to see what the freezing point is. If the coolant will not protect enough for the low temps of your area, drain the radiator, heater core and block and leave it empty.Remove the battery and store the battery in a building that doesn't go below freezing and/or connect a battery tender to the battery for the Winter.
Rodents can and will build nests and really make a mess of your car inside and under the hood. Purchase some commercial products to discourage them. Note, dryer sheets don't work as a mouse deterrent. I've seen the mice use the dryer sheets in the making of their nests.
