On my iPod... which is a mini (they don't even make them anymore), I just had to toggle the on and off slider a whole bunch. It worked, I just am not sure exactly how many times I had to do it.

Can you break your ipod if you repeatedly try to jailbreak it?

If you jailbreak your ipod, even repeatedly, you can restore it to factory default settings by doing a restore. It will restore to the un-jailbroken configuration every time it upgrades the operating system when you update it. Jailbreaking, by itself, will not permanently damage your ipod but you may expose the system to malware that might damage it.

Why don't applications open on my iPod?

It's probably because you've got a tethered jailbreak and your iPod turned off. To fix this you have to plug your iPod back into the computer and reboot it. If your iPod isn't jailbroken then you should try and restore your iPod to its factory settings.
