If you jailbreak your iPod, even repeatedly, you can restore it to factory default settings by doing a restore. It will restore to the un-jailbroken configuration every time it upgrades the operating system when you update it.
Jailbreaking, by itself, will not permanently damage your ipod but you may expose the system to malware that might damage it.

Yes there is a chance that your ipod may break but its really small, the iphones have much bigger chance of breaking due to jailbreak. I jailbroken my ipod few times and it wasn't as great as I thought it would be, but you can try. If you ipod after the jailbreak appears to be stuck and you cant do anything with it, don't worry just simply press the home button + the shut down button at the same time and hold them until your ipod turns off and an apple symbol appear. That will restart your ipod and you will have to load the apple software again and you ipod will be as good as new.

It depends on your firmware. For 1.0.0-1.0.2 (which you probably don't have): Go to iphone.nullriver.com/beta/ and download AppTapp for iPhone. I do not know if it will work with iPod, but it's worth a try. Open AppTapp and click the button to jailbreak your iPod/iPhone.

Well since you tried to jailbreak it really, the only way you could get it fixed is by Apple. But since there was a jailbreak attempt, it voided your warranty so you can't get it fixed by them. Try searching 'How to unjailbreak an iPod Touch'.
