This is a very broad question, so please ask further questions or contact me through my profile if I don't cover what you were looking for. I assume that by how the church "works", you are curious about the hierarchy or organization of the church.
Mormons (members of the Church of Jesus Christ of Latter-day Saints) believe that Jesus Christ is the head of their church. They believe that Jesus literally communicates His will for His people to the Prophet, who is the president and highest mortal authority in the Church. The Prophet is assisted by two counselors and Twelve Apostles. Each of the counselors and Apostles is also considered a prophet, seer, and revelator. In most decisions regarding doctrine or policy, these 15 men must reach total agreement that the decision is the will of God.
International operations and local leadership are overseen by Seventies, who are assigned a geographical area. Auxiliary organizations (Relief Society for women, Primary for children, Sunday School, and youth) each have an international presidency which provides curriculum and support to local chapters. Also at this level is the Presiding Bishopric, which oversees the temporal affairs and humanitarian/charity efforts of the church.
Locally, congregations (called "wards" or "branches") are assigned boundaries to ensure that each has the membership needed to operate successfully. Preaching, teaching, and leadership responsibilities are rotated and shared by every active member. One man will serve as the Bishop for several years and be responsible for the organization of the congregation as well as a spiritual counselor for the members. He will be assisted by presidents of the congregation's chapters of the auxiliary organizations. This group of approximately 10 men and women make up the Ward Council which meets regularly to discuss the needs of the congregation, plan worship services, etc. Class teachers, musicians, and various committees, as well as weekly prayer leaders and speakers are assigned to congregation members by the Ward Council.
Five to ten congregations are grouped together into regional "Stakes". A Stake enables the local congregations to support each other, as well as provides a channel of communication between the local congregations and the international leadership.
Temples and Missions operate mostly independently of the stakes (but in cooperation with them) and report to Seventies.
