The bread represents the physical body of the Christ. He was broken, so that we wouldn't be.

The bread symbolises Christ's body, while the wine or water we take at the sacrament symbolises His blood which was split for us. Remember at the last supper he said to his disciples "Do this in remembrance of me".

Lk24:13-35.) and it is this expression that the first Christians will use to designate their Eucharistic assemblies; (Cf. Acts2:42; 29:7, 11.) by doing so they signified that all who eat the one broken bread, Christ, enter into communion with him and form but one body in him. (Cf. 1 Cor 10:16-17).

How Our Blessed Lord is recognized is through faith. Without faith, which, by the way, is a gift of God, it is impossible to either recognize Our Blessed Lord in the Breaking of the Bread, or to understand how others do so. The only way to recognize such a thing in a believer is to see how they live their lives. A genuine follower of Christ lives a counter-cultural life that is different from those around him.
