Soak your meat first over night then when you get ready to barbeque put lighter fluid on the charcoal then let it soak for 10 mins. then light the charcoal with a piece of… paper then put the rack back on the grill. then once the fire go down put the meat on the grill and close it. and check on it every 15mins. :)

Slowly is the biggest key to grilling chicken. Marinate with the spices that you like, but don't use something with a lot of sugar in it. Include some oil in that initial soak…. If the fire is too hot, you will burn the outside before the inside is cooked. Use a good thermometer to insure you get the meat cooked all the way through. Cooking slow has its time and place, but not on the grill. High heat is necessary to sear the meat and keep it juicy. Chicken breast has little fat to cause a fire (unlike an untrimmed steak) so the oil is a good addition. I am doubting the grilled chicken is really grilled, due to when I went to KFC for the grilled chicken I was told that there would be a 20 minute wait because one of the… "friers in down". So, the question that went unanswered is what does the "frier" have to do with "grilled chicken"?? No answer to that! The grilled chicken DOES have a lot less cals and fat than the fried, though. And it tastes pretty good.

Everything you cook on the grill needs to be on high heat so you sear it and keep in the juices. If it catches fire it is too hot. Marinade is good for chicken breasts because… of the lack of fat/flavor. A clean, hot grill will cook chicken perfectly. Don't turn it too often and use a little oil prior to putting it on the grill. Oil can be mixed in with things like BBQ sauce to keep it from burning.
