== == If eggs start out as Grade AA, they remain AA for only two weeks if properly refrigerated. After that, they'll be Grade A for another 2 weeks. Eggs can remain edible for even longer than one month, but freshness (egg yolk that sits firm and high, and a thick viscous egg white) will be noticeably less after two weeks. There is an expiration date on the carton. If in doubt, put the egg in water. If it floats, do not use it.
Assuming your fridge maintains the proper temperatures, you should be able to maintain eggs in the refrigerator at least until the expiration date. If you want to test an egg for freshness, there's a means for doing this. The fresher an egg is, the less air it contains inside it.
Get a kitchen bowl, and run water in it. A fresh egg will sink to the bottom of the bowl and won't float at all. An older egg that is still good will float on one end, with the other end still touching the bottom of the bowl. (By this I mean, the top of the egg doesn't have to float up to the surface of the water, just that the egg looks like its standing up on its end.) If the egg completely floats, it should be discarded.
i just ate some scrambled egg meal from jimmy dean, and the "best by" date was 3 months ago. I'm not dead or sick.
Normally a month but some eggs like free range differ :)
Fresh eggs should be safe for 3 - 5 weeks if stored in the refrigerator.
