A year is a stretch but it will not last a year in your typical kitchen freezer which is opened and closed everyday.(during these opening and closing temperatures are rising and lowering resulting in slow water loss and chemical changes) HOWEVER if you put this in one of those NON DEFROSTING CABINET freezers the steak will last many months longer maybe up to a year.
NOTE- Most of our commercially frozen foods are stored in very large frozen food warehouses where the temperature may only vary about +2 degrees during their storage life about 0 degrees F to -5 degrees F. Therefore their shelf life will last a lot longer time than our home freezers. Although I wouldn't recommend eating , but I have eaten steaks that have been vacuumed packed for as long as three years . No lost of flavor , and tender, freezer is set to 0' not opened on a daily basis .
If the meat/carcass was vacuum sealed at the fabrication/cutting site, it could very well be good up to roughly 3 months in your refrigerator as long as the temperature is adequate. Most home refrigerators are set to 40 degrees. In order to promote healthy storing, vacuum sealed meats must stay between 32F and 34F degrees. This process is actually called postmortem wet aging.
I highly recommend you study aging procedures and seek advice prior to attempting this technique. Under the wrong conditions, your meat will actually decay and spoil rather than tenderize and become more palatable.
Please take note of packaging dates printed on your sealed meats as there is time needed to cut, clean, package, ship, reship and display at your local store. For safety, if your package has a "best by" date, try not to exceed it by more than 3 days as those dates were printed for specific reasons. Unprinted packages should be consumed rather quickly or frozen. When you repackage a previously sealed meat product, you are introducing contaminants, such as bacteria, and with improper handling, your product will spoil.
