I put four cups of beans in the 11 cup slow cooker and fill it up with water to the brim. I've never measured the amount of water, but it's more than 7 cups, because there's quite a bit of air in four cups of dry beans. When they're done, they fill up the slow cooker, and all the water's gone. I have to add about a half cup of water to finish them off. no, because if they are staying soaked in HOT water overnight the peels will come off and the inside will get mushy and gooey, so its not a very good idea to soak beans in hot water overnight ALTHOUGH if they're gonna be soaked in cold water its fine, even though i don't see why you would want to soak beans in COLD
