Sometimes, (if you were a true Sith) you would try to bend the Jedi toward the Dark Side. Meaning destroying everything that he or she ever cared about besides the Republic like their family or friends.
Jedi would only fight in a battle.
No they do not defeat others just by using marks of contact.
