Dont update to iOS 6. It runs bad on the ipod touch and when you jailbreak it, it will be only slower. I will downgrade to iOS 5.1.1 since it is the best for me right now.

Home Screen>Settings>General>Software Update Once you tap the Software Update tab, it will check (you must be connected to WiFi I believe) if you need an update. The latest on 2-21-13 is iOS 6.1.2
If you are running iOS 5, you can update to iOS 6 wirelessly from Settings>General>Software Update. If you are running an older version of iOS, you have to plug you iDevice into an iTunes-authorized computer and download and install the update software from there. You should be prompted there is new software available the moment iTunes recognizes your device.

If you are not fond of the iOS 7 update, then you must update to iOS 6 before this fall because after that, Apple forces you to only update to the latest software version or not at all. But you don't have to worry about this is you have a 4th gen iPod Touch or iPhone 3GS which can't get iOS 7.
