I suggest braving a test pistachio or two to test the waters. They won't make you horribly sick, but they taste terrible.

However, keeping nuts in a cool place and even in the freezer will prolong their shelf life. Before biting into a nut past its expiration date check for mold.
A person can eat out of date nuts if they are only just a couple of months out of date. Nuts that are more than 3 months out of date need to be disposed of .
