No because a Jedi's spirit still remains which means the Jedi were never extinct.

Um, actually, she is right about the fact that Luke was not the last Jedi, but it is not because of their spirits. George Lucas and other writers continue to write Star Wars books and comics many years after the battle of Yavin, meaning there are MUCH more Jedi than Luke, Luke was just the Grand Master of all Jedi, but he is nowhere near the role of the last Jedi. He was exiled from the New Jedi Order and the Galactic Alliance because he was charged with deriliction of duty, Kenth Hamner then became acting Jedi Grand Master. There were many more Jedi such as:
-Ben Skywalker
-Jacen Solo (Darth Caedus)
-Jaina Solo
-Anakin Solo
-Tionne Solusar
-Kam Solusar
-Jaden Korr
-MANY MORE
