This probably isn't one of the best answers ever but animals like cattle (cows) are selectively bred so that the consumers can find what they want. Say for example a farmer bred a cow so that the meat isn't fatty- this means that people might prefer this as this is the meat they like best.- selective breeding however is probably not the best idea as the cow may not live its normal, most natural life. The process does not harm the animals but but can be risky especially if the animal you are breeding has an unknown disease.
