The biggest difference that comes to mind would be in technology/equipment. Going back only 1000 years or so, most cooking was done either directly over a fire or in an earthenware or iron cooking vessel (think of a dutch oven) that was placed close to the fire or directly on the coals. Today many homes have several different types of cooking vessels such as pots, pans, baking dishes, sheet pans, roasting pans, etc. Many homes have only one stove top and one oven but they could be electric coil, electric induction, natural gas, propane, etc. Many homes today also have microwave ovens as well as specialty cooking appliances such as crockpots, rice cookers, steamers, toasters, etc.
A specific recipe can be altered in numerous (if not infinite) ways, but for the most part, the dishes you encounter every day have been around for a long time or are derived from dishes that have been around for a long time.
