A cooking method is the way a food item has been prepared. There are several cooking methods; however, all of them fall under two categories: moist heat cooking and dry heat cooking.

In dry heat cooking methods, water is not used to cook the food. The food is left dry and heat is applied to cook the food. When heat is applied to the food, the food cooks in its own juice or water added to the food during its preparation evaporates during the heating process, leaving the food to finish cooking in the dry heat.

Baking

When we cook food iby baking, we use dry heat in an enclosed environment, such as an oven. This type of heat browns food well. Baking is used to cook pastries and breads and roasting meats and vegetables.

Roasting

Direct heat is applied to large cuts or chunks of food when using the roasting method. Roasting is a semi-dry heat method, most commonly done in an oven. Often, the food is browned over a high heat on the stovetop before placing in the oven to roast. The natural juices are sealed inside the food, allowing the food to cook in its own juices. Roasting is used for meat, poultry and fish, as well as for many vegetables. With roasting, very little nutrients are lost and natural flavor is retained. The food is usually left uncovered for roasting.

Broiling and Grilling

Broiling and grilling are often considered the same type of cooking method. The major difference is that with broiling, the food is cooked close to and below high dry heat, and with grilling, the food is cooked close and above high dry heat. With both methods, smaller pieces of meat or vegetables are cooked using little or no oil. The food should be basted to keep it from getting to dry and turned frequently to ensure even cooking and browning. Fish is an exception to this as frequent turning increases the risk of it falling apart, so cook one side completely before turning. It is a good idea to use tongs to move the food around or turn it during the cooking process rather than a fork. You don't want to piece the food, which can allow juices to escape and the food to dry out.

Shallow Frying

With shallow frying, food is cooked in a preheated, uncovered frying pan, or skillet, in hot oil or butter. The food will brown quickly on the outside, so care must be taken to ensure the inside is cooked completely. This is sometimes done by lowering the heat once the food has browned.

Food is sometimes prepared for frying by coating in breadcrumbs, flour or cornmeal, or dipped in batter. Juices or water should not be dripping from the food, as this will cause the oil to sizzle and spit out of the pan when the liquid hits the hot oil. The food is turned over or stirred around occasionally while it is frying.

Sauteing

Sauteing is similar to shallow frying, except that the pan is always covered. The pan used for sauteing has higher sides than a frying pan. Meat used in sauteing should be tender and fairly thin. It is often dusted with seasoned flour before cooking. The pan may be moistened with oil or stock. Sauteing is a more delicate cooking method than pan-frying.

Dry Frying

Dry frying is done without the addition of fat. This method is used for foods which contain natural fat, such as bacon and sausage. The heat is usually applied low at first, until the fat begins to melt and release; then it is raised to a higher temperature.

Deep Frying

When deep frying, foods are completely immersed in hot fat at a higher temperature. The food is placed in the hot fat quickly and it cooks quickly. If the temperature is too low, the food won't begin frying immediately and will soak up the oil, which will cause it to be soggy and very greasy. If the temperature is too high, the food will cook to a crisp on the outside and not be done on the inside. The food should have plenty of room - do not overcrowd - it won't cook as well and will cause the temperature of the oil to drop.

Stir Frying

Stir frying is best done in a wok over high heat and with very little fat or oil, which is near to the smoking point. The foods are cut into small pieces and kept constantly on the move by tossing and turning with a spatula or fork.

Poaching

Poaching is a gentle cooking process done in slowly simmering liquid such as water or stock. Herbs, spices and vegetables may be added. Poached foods are normally eaten hot unless they are ingredients of a cold salad.

Blanching

Blanching is used more as a preparation for cooking later than as a cooking method in itself. Blanching is often used for freezing uncooked vegetables by placing them in boiling water and simering for a very short period of time, then transferring them immediately into cold or ice cold water. Blanching also helps to reduce strong flavors and preserves color in foods.

Steaming

For steaming food, water is added to the pot with some sort of rack, metal basket or stand in the water to hold the food above the water. The water is then brought to a rolling boil. The food has no contact with the water; rather, it is cooked by the steam from the boiling water. With this method, foods retain their flavor and nutrients.

Stewing

Steing is a long slow moist cooking method used for vegetables and some tough cuts of meat and to bring out the flavor of foods. Meat is often prebrowned, and meat or vegetables are cut into small pieces and cooked in simmering liquid such as water or stock. In this technique food is cooked in a boiling liquid that is usually water, but may be stock or milk. It is a more vigorous cooking method than simmering and the liquid usually becomes slightly thickened. With stewing all ingredients are placed in the pot and cooked together at the same time.

Boiling

Boiling is cooking food in rapidly boiling water. You can boil meats or vegetables, but this method usually produces tough and tasteless meat and is therefore is better for vegetables. Green vegetables, pasta and eggs are usually added to water that is already boiling, brought back to the boil and then reduced to simmer. Covering the pan is optional. Flavor and nutrients can be lost significantly using this cooking method.

Braising

Braising is acombination of roasting and stewing or poaching on a stove or in an oven. Foods are placed in a small amount of water in a heavy ovenproof pan with a well fitting lid.

Microwave Cooking

This method causes heating by causing the molecules of the ingredients to vibrate. It is a fast method of cooking, with less fluid loss and does not of itself produce browning.
