There are many different kinds of horse jumps:
Vertical: a single straight up and down jump.Picture:
Oxer: Spread jump. Two verticals next to each other. There are many different kinds of oxers:
A ramped oxer: with the back rail higher than the front rail
A square oxer: with both rails at the same height
A swedish oxer: The poles slant in different directions creating the look of an X in the air.
Other jumps:
Triple Bar: like an oxer, is a spread jump. But this time with three verticals gradually getting higher.
Cross rail: two poles going different directions creating an X
There are other unique jumps used in some competitions (like a Wall, a liverpool, a Fan jump, the open water, and a hogsback) but the ones I mentioned are the most popular.

You should be in-balance with the horse to begin with. If the horse jumps 'big' try to stay with the motion and possibly grab some mane or if you use one, a neck strap on the horse. It's not always possible to stay put however so you should practice how to safely fall from a horse.
