We don't know. Most Greek presentations of her depict her as looking Greek (unsurprisingly). But she was a princess of Crete, according to mythology, and was therefore Minoan, not Greek. Keep in mind, however, she was not a real historical figure, but probably a Cretan fertility goddess "demoted" to mortal status with the Mycenaean takeover of the island. So trying to say what she "looked like" is a bit like trying to say what Zeus looked like. Or Superman. She's a fictional character.
