She says "God dag på dig!" which, roughly translated, means "Good day to you!" She is a little tricky to understand, as her Swedish accent is not very good. I believe in another scene she maybe says "Min björk stock"(?) which would mean "My birch log."
In the original in 1968 Ulla was played by Lee Meredith; in the remake in 2005 Ulla was played by Uma Thurman.
Her role was Ulla, Max Bialystock's "toy".
