Pasteurization is the process whereby a substance is heated to a high temperature, and then cooled suddenly in order to kill the bacterias present. Milk is pasteurized in order to kill potentially harmful bacteria, before it is bottled and sold.
The term was coined after its creator, Louis Pasteur. He developed a method of processing that involved heating milk/dairy products to very high temperatures for several seconds, which kills any harmful microbes or bacteria present. The process is still widely used and in most countries it is a requirement if those products plan to be sold to the general public.
