This can only be supposition, but it would seem that Saul (Paul) would have continued in his persecution of Christ's followers. Without Paul in the picture as a devoted Christian, the New Testament of The Bible might have contained more writings of Peter, the chosen one of Jesus to be His "rock" upon which the church would be built. The NT and church today might not have been built around the teachings of Paul rather than Peter.
