What if your shredded coconut is now stale do you throw it out?

You might be able to rehydrate it. Place it in a container with a tablespoon or two of HOT water. Cover with plastic wrap and let it sit on the counter for half an hour. If it's not soft by then, it's not going to get any better.

How do you open coconuts?
Well, first you need to get a coconut and try to shave, or cut off, most of the hair. Now, there are three eyes of the coconut that look like brown circles. One of these will be a soft one. Take a knife and stick it in that circle and twist the knife, making a hole. Then, place the coconut on a glass and let the milk drain out. Once all of it has drained out, place the coconut in a fairly big zip lock bag and close it. Then, take it out side and smash it on the cement a few times. All of the coconut meat will stay pretty clean. Next wash off each piece of cracked coconut and place on a cutting board. Place the knife in between the meat and shell to get off all of the unwanted coconut. Enjoy! The shredded coconut meat is good in 7 Layered Bars.
