Many things including how to avoid accidents; panic braking, how to swerve to avoid objects in the road. You also learn what to do in many different situations you might encounter while riding, wet pavement, cars pulling out in front of you and how a motorcycle reacts in emergency situations.

Do you need a motorcycle to get a motorcycle license?

You do not have to own a motorcycle to get a licence, but you will need to borrow a bike to take the road test unless you buy one in the meantime. Not only do you not need to own a motorcycle, but depending on where you live, you may be required to test and ride on a motorcycle provided for you for testing in a rider education course. Some states do not offer an option for testing on a personally owned or even borrowed motorcycle. A rider may be required to use course provided motorcycles only.

Driving a motorcycle?

First off, you do not drive a motorcycle. You ride it. If you try to drive it you are going to fall. You use your entire body to steer a motorcycle. I suggest you take a motorcyle course in rider safety.
