Staffordshire Lobby is a traditional dish from North Staffordshire. It was originally eaten by Potters who were poor and didn't always have enough money for fresh ingredients. Lobby has no official recipe because it is known as an all in one recipe where the ingredients were simply 'lobbed' into a pot. The traditional lobby contained leftover meat, bones, diced onion and other vegetables.
