Man vs Man is a conflict between two people
An example would probably be war, or some sort of fighting where there is a person versus somebody else, like boxing. It does not necessarily have to be violent, just a person versus somebody else.
Man vs. himself is a type of conflict in a literary work that shows the character struggling to pick between options or is having a mental struggle, other conflicts include man vs. man, man vs. nature, man vs. God, and man vs. society.
A man vs man is when any character has a conflict or problem with another character. Often it is the main character having conflict or a problem with another important character but this is not always the case. An example of this is in the book 'Green Eggs and Ham' Sam-I-Am wants his friend to eat the green eggs and ham but his friend won't. The conflict is resolved when his friend finally gives in and just eats the green eggs and ham and ends up loving it.

Man vs man is just a theme that indicates people are on the different sides of the conflict rather than Man versus nature, or the environment, or technology, or God, or man versus himself. It doesn't really have to be humans... you could have a man vs man theme if two aliens were facing off. If only one were human, you might have man vs alien, or man vs superman (anything with better than human powers).
Man versus Self is when the main character in the story has a problem with him or herself.
An EXAMPLE for Man VS Man is two people fighting, doing an argument, delating, or doing a competition.
