What is a quenelles?

A quenell is a shape made with a soft food such as ice cream mashed potatoes or a dough of some sort. It made by using two spoons of equal size, pressing and rotating the food item in between. A true quenell looks like a three sided football about 1 1/2 in to 2 inches in length, tapered ends, and three distinct sides. To make, scoop the food with one spoon, and with the other, press and scoop the food item with the other. Keep doing it until a three sided football is achieved.
