Expanded functions are specific areas that need additional training, as a dental assistant, you will learn basic skills like tool names, product names, and definitions. You will take additional classes to take x-rays, impressions, learn to clean teeth or do sealants (a plastic product put in the pits and fissures of molars to help prevent decay) all of these are called expanded functions. Above and beyond your simple basic training. I am a dental assistant and I strongly suggest getting this training before applying for a job. It is well worth your money.
