French Guiana's national dish is the Guyanese pepperpot, coupled with curried chicken and cook up rice. The dish is derived from the Amerindians, or the American Indians and indigenous peoples of the Americas who lived in the Western Hemisphere. The dish consists of stewed meat with cinnamon, Caribbean hot peppers, and cassareep, which is a special sauce made from the root of cassava. It is traditionally served on major holidays such as Christmas Day, the American equivalent of having a big turkey for Thanksgiving.
