Does Artemis leave something after she been to a place if so what?

Artemis does not. It is interesting to note the name of Artemis's mother, Leto is close to lêthô, unobserved. This is underlined by the rival of Artemis, Aura's father being Lelantus which means to "move unseen".

Does Artemis play an instrument?

No. Artemis is not into music. She is the godess of the hunt. But her twin brother, Apollo, does. I believe there is a story about Apollo teaching Artemis how to play an instrument, but it could be fan made or something.

At the end of Artemis Fowl and the time paradox Artemis remembers the word fairy is this how he actually starts searching for them?

This is probable. I say this because if Artemis hadn't remembered that it was something about fairies, he wouldn't start intentionally searching for them.

Why weren't the American moon missions called Apollo instead of Artemis?

I think that the American Moon missions were called either Appollo, in which case I think someone told you something wrong but if they were called Artemis then it is because the british moon missions were called Artemis. Which I think is better because Appollo is the Ancient Greeek God of harvest and the sun and Artemis is the ancient Greek God of the moon.
