It depends on how long the mouse has been trapped:
Mice can die within 24 hours without water.
They need to eat a lot too, and will get weak if they have not eaten
anything/much in about 13 hours; however they are usually OK when this
happens, but they can easily die if they don't get food for over a day (25 hours)
If you have found a mouse in your trash can, the best thing you can do if it
is looking healthy (running around, shiny coat, breathing fast but not noisily,
trying to run away) is to let it go.
It is very tramatic for a wild mouse to have contact with a human, and/or
put in a cage. If it is active enough to run when you touch it, it can find food on it's own.
However, if it is obviously sick and lathargic, you can catch it and take it in your
house so you can try to save it.
If you caught it's starvation/dehydration in time, It is likely you will be able to save
it by giving it water (mixing a little yogurt or sugar in with the water makes it more
interesting, if the mouse won't drink plain water.)
And food, (things mice like are nuts, bread, yogurt, cereal, peanut butter, ect.)
Anything you like that is healthy. (Make sure you give it protein if it is starving.)
But if it has been without food and water for more than a day, it is probobly too late.
In terms of how long it will live afterwards, a mouse will be likely to live their full expected lifespan
if you are able to rehabilitate them in the first place.
If you have fed and watered it for two days and it is not getting any better,
it is probobly not going to survive.
But if after two days it is looking completely healthy, it will likely have as long a life as
any other mouse.
(Between 6 months and 3 years, if not killed by a preditor)
If you have trapped and bee and made food and water inaccessible, it would take about 48 hours to die. If he is not trapped, he will go search for food and water to prevent death.

Mice typically absorb all the water they need through the food they eat, or from morning dew. They can get by with surprisingly little water. Pet mice should always have a full water bottle because commercial mouse food is dried for preservation.
