As far as I know there are two sorts of gooseberries, the greenish ones and the reddish ones. In the Netherlands [Holland and the provinces Eastward of it] the greenish/yellowish ones are the best known sort. The inside is colored just as the outside, with the somewhat darker kernels in it. As far as I remember the reddish gooseberries are almost the same inside, maybe with a slight touch of red in it.

Really, it depends on what type of gooseberry. For instance, the Black Velvet Gooseberry is delicious and is, as you might have guessed, black, however most gooseberries when ripe are either a soft red or a sour-looking green.
