The danger of the predator- the wolf appears to be friendly but eventually kills the grandmother and Red (depending on the version you read) so it's the idea of the deceptiveness of evil

The transition between girl and woman- the red hood and cape red wears is symbolic of a woman's menstrual cycle and the dark woods could all represent Red's journey through puberty

Sexuality- red is also a colour of sensuality and the role of the wolf is both symbolic of a predator and a male with sexual experience so when the wolf climbs into bed and dresses as the grandmother and eventually "eats Red all up" it could represent Red symbolically loosing her virginity to a lover.

The cycle of life- In some adaptations Red and her grandmother are cut out of the wolf's belly by the Huntsman this could represent the idea of life, in Red as she is an innocent child, the wolf being death and her emergal from the wolf alive and whole again as reincarnation.
