It is my understanding that in the USA, the USDA requires Lactobacillus bulgaricus and Streptococcus thermophilus to be used to culture a dairy product like milk for the result to be called "yogurt." After that, anything goes - some yogurts have as many as 5 strains of bacteria.
Ingredients used to make yoghurt (for own or homeconsume): Milk (example 2pints) and fresh small yoghurt. Preparation: the milk should be heated, and put aside to cool down. After the milk is cooled down to slightly or only just warm, you put one small cup of yoghurt in it and stir it once. You put it aside (not near hob or oven) and cover it with a potcover, leave it standing for a day (without shaking or getting in touch with it). The pot with yoghurt, which should be now firm, can then be put into the fridge. The amount of milk is not of importance, the amount of yoghurt should not be more then 1 small cup.
