New France was the name given to its possessions in North America by France and referred to the territory now called Quebec and adjacent territories under French control before the Seven Years War (called the French and Indian War in the US). These lands came under English control in 1763, and were no longer called New France. The language spoken in New France was French. In addition, of course, the Native Americans who lived in the area continued to speak their own languages.

New France doesn't exist anymore. When it did, they spoke French and Native American languages there.

Today, the only former New France area that still speaks French is Quebec.
