Every high school is different. I don't know if there are any specific classes that you need to take. Not all high school's offer courses for animal science.

Science classes are your ticket. Science and history. Take science classes like Biology, Chemistry, Zoology, especially Anatomy. If the school offers a science honor society, be sure to try to be accepted to that.
Yes there are animal science jobs that require additional school beyond high school. Some animal science jobs require you to have a college degree to be able to qualify for the job.
take as many science classes as possible and if your school has a science club be sure to join it because the teacher will go a little deeper than he will in class
I suggest taking animal science and other animal related classes your school might have. psychology might also be helpful. Your school counselor should be able to help you choose which classes you should take.

IF you plan to graduate you need to meet the requirements of the high school and this includes science classes. Colleges also require three years of science.
