Use a small sharp knife and lay it flat along the top of the flesh. Poke the tip of the knife through and under the membrane and keeping the knife flat against the breast, cut under the membrane a little in one direction, then hold the cut part with your other hand and use your knife in the other direction, pulling the membrane up as you cut. Continue until all of the membrane is removed. Search "preparing duck breast" and find a video. The one by l'Atalier des Chefs is very helpful.
