Though I suspect that an exact answer / one that is desired, is not possible, I would venture to say that the majority of the mob members were Protestants of various sects. This is reasonable when one considers the geographical area and the time period. Although it is entirely likely that some of the members of the mob were not affiliated with any particular religious group - "Mormons" were also persecuted for their political / economic beliefs (they were anti - slavery in a southern state), it is doubtful that they all belonged to the same religious denomination.

Addition:

It has also been suspected that some members of the mob were former Mormons were were angry with Joseph Smith for a variety of reasons, but as the previous answer stated, it is very unlikely that all belonged to the same church or religious organization. It was most likely a collection of various Protestants, non-religious people, and former Mormons. Since most that were in the mob were never identified, it would be impossible to know.

They weren't. None of the known members of the mob that killed Joseph Smith were in the Donner Party. The Donner Party did have two families which had connections to Mormonism. There has been some disagreement as to whether they were practicing Mormons or if they had left the religion at an earlier time, but none of them were party to the murder of Joseph Smith.

They did not have an official name, as they presumeably had only formed for this single event. The mob is usually called an "Anti-Mormon Mob" or an "Armed Mob", but they were not any official organization, just a group of people who were angry with Joseph Smith or Mormons in general.
