Well it could mean several things. If the horse seems happy with her ears facing forward, she might be greeting you or trying to preform a 'handshake' trick her owner taught her thinking you'll give her food as a reward. (Never feed another persons horse.) If she seems angry or upset with her ears back it probably means that she's trying to keep you away from her'territory'.
