Yes, a Beef Wellington can be frozen, but only before baking it. Simply prepare it as if you would bake it, but instead of putting it in the oven, place it in the freezer wrapped in foil. Make sure that it's level, and that you will be able to place it in the oven later without having to move it too much.

Allow the Beef Wellington to thaw overnight so that it gets baked properly, or else you will end up with very uneaven meat. Once it has thawed, never put it back in the freezer. It can be kept frozen for about a month, after that it can still be good to eat but the flavour might go down rapidly.
