China, it was created as a cheap way to feed workers while they worked on the Great Wall of China. they found evidence of it from 200 BC in China.

But back then, they used wine, not brine to make it. There is a form similar to saurkraut made in Korea, called Kimchi. That form of it is on the spicy side.

It would be difficult to identify the origin of sauerkraut. Salted, pickled and otherwise preserved vegetables, including cabbage, have been part of cooking skills for centuries, if not millenia. The word "sauerkraut" comes from the Germanic languages, and is associated with northern Europe.
