Sauerkraut, a fermented cabbage dish, has a long history, and its exact origins are not definitively known. However, it is widely believed to have been invented, or at least first prepared, by the ancient Chinese more than 2,000 years ago. The process of fermenting vegetables, including cabbage, was used as a method of food preservation. It is thought that the nomadic Mongols may have introduced sauerkraut to Europe during their conquests, and it became a staple in Central and Eastern European cuisines. The German and Eastern European immigrants brought sauerkraut to the Americas, where it became a common dish, especially in regions with large German populations.
