In order for the bird to be as light as possible for flight. This "hollowness" reduces their body weight by about 5%, depending on what kind of bird it is, in contrast to their would-be weight if their bones were not hollow.

They don't, bird bones are very light and airy due to their porousness. Helps them fly.

Though, penguins and ostriches and the like do have sturdy bones, for obvious reasons. Those bones are derived from standard airy bird bones though.
