If I say "a black surface will get warmer in the sun than a shiny one, because rays won't reflect away from the black as much as from the shiny surface", then it's a theory that can be tested, and it's science.
But if I say "humans were created by God, in his image" then there's no way to test this. We can't go out and look at God and see if there are any similarities. Without a way to prove or disprove a theory - no science, only belief.
