Medieval castles changed because Wooden castles weren't very strong, rotted quickly, and would sag when ever it rained, it also could easily catch on fire! (even a small kitchen fire!) Stone never had any of those problems and was much more sturdier, the only disadvantage for stone castles would be that it took a long time to build, it would only grow up to 10 feet per year!
