Because they're very thin - often less than a millimetre in thickness. Their sole purpose is simply to contain the developing embryo. It has to be relatively easy for the developed chick to escape, as there's only a limited supply of air inside the shell.

If the baby bird couldn't escape quickly (because the shell was too thick) it would suffocate.
